Georgian traditional - Satsivi

You will need:

 

  • 2 kg of turkey (the recipe uses frozen Pinar turkey, which was roasted in the oven)
  • Salt
  • Paprika
  • Chopped red pepper

 

Mix these ingredients well with the turkey and put it in a preheated oven at 200 degrees for 1 hour and 20 minutes. You can adjust it according to your oven.

 

For the juice:

 

  • White walnuts - 800 gr
  • Garlic - 3-4 cloves
  • Salt - 1 teaspoon or to your taste
  • Red pepper - 0.5 teaspoon
  • Dried coriander - 1 teaspoon
  • Foreign seasoning - 1 teaspoon
  • Yellow flower - 1.5 teaspoons
  • Boiled water (to extract oil) - 3-5 tablespoons
  • Raw coriander, finely chopped and squeezed (we will only need the juice) - 50 gr
  • Boiled and cooled water (to thin it to the desired thickness) - 600-800 ml

 

Grind the walnuts, then grate the garlic and again the walnuts a second time. Add the red pepper and pour the boiled water, mash well with your hands until the oil comes out, strain the oil and store.

Then add salt and spices to the walnut mass, mix everything well, pour in boiled and cooled water, as much as you want to get the thickest juice.

Cut the turkey into pieces, put them in a bowl, pour in the juice, walnut oil, and the sauce is ready.
